Mix together 2 cups of warm water, 1 tablespoon of yeast and 2 3/4 cups of flour in a large mixing bowl attached to a stand mixer. (This recipe can also be done without a stand mixer if you want). Let the mixture rest for 10 minutes.
Next, add 1/2 a tablespoon of salt, 1/4 cup of oil, and 1/4 cup of honey to the mixture. Mix in 2 3/4 cups to 3 3/4 cups of flour, adding the flour 1/2 cup at a time, until the dough pulls away from the sides of the bowl while mixing. Knead the dough for about 5-8 minutes until the dough is smooth.
Cover the dough and allow it to rise for 1 hour or until doubled in size.
Remove the dough from the bowl onto a clean surface and roll into a large rectangular shape about 15" x 30."
Spread 1/4 to 1/3 cup of softened butter evenly over the surface of the dough. Sprinkle a 6 ounce package of unprepared strawberry Jello, covering the butter. Top with about 1/2 pound of chopped fresh strawberries.
Roll the dough cinnamon roll style.
Cut into 12-15 slices and place a half inch apart on a greased 9 x 13 pan. Let the rolls rise for 30-45 minutes.
Bake at 350 degrees F for 20-30 minutes or until the internal temperature of the rolls is 190 degrees F.
Let the rolls cool for 15-30 minutes.
Prepare the frosting by beating together 1 cup of heavy whipping cream and 2 cups of powdered sugar. Beat until the mixture is thickened to your preference. Spread the frosting on the rolls evenly and enjoy!
