Cook the grains by bringing 1/2 cup of grains and 1 cup of water to a boil. Once it starts to boil, put a lid on the pan and lower the heat to medium. Cook for 10 minutes. Remove from heat and allow to cool for about 15-20 minutes.
After the grains are done cooling down, mix the yeast and warm water in a stand mixer with the dough hook attached (Or, if doing without a mixer, mix the ingredients in a large bowl). Then, allow the yeast and water to sit, or proof, for about 10 minutes or until the mixture begins to bubble.
Next, add the cooked grains, oil, honey and salt to the yeast mixture and mix. Add the flour, 1/2 cup at a time, until the dough pulls away from the sides of the bowl while kneading and creates a ball. The dough should be slightly sticky.
Knead the dough for 5-8 minutes, until the dough becomes smooth. Cover the dough with a clean dish towel or plastic and allow to rise for 1 hour.
Remove the dough from the bowl onto a clean surface and form the dough into a rectangle shape, the same length of the loaf pan. Place the dough into a greased pan. If you want to add oats to the top of the loaf, simply mix together 1 egg and 1 tablespoon of water in a small bowl and brush onto the dough then sprinkle with enough oats to lightly cover the top of the dough. Cover the pan and let the dough rise for about 45 minutes or until the dough rises above the sides of the pan.
Bake at 350 degrees F for 15 minutes. Cover the top of the loaf with aluminum foil and bake an additional 15-25 minutes, or until the internal temperature reaches above 180 degrees F.
Remove the pan from the oven and allow to cool for about 5 minutes in the pan. Remove from the pan onto a cooling rack and allow to cool or just cut right in and enjoy a hot slice of deliciousness. Enjoy!
