Mix together warm water, yeast, and brown sugar in a large bowl attached to a stand mixer. Let sit for about 10 minutes until the mixture becomes bubbly.
Add the oil, molasses, honey, cocoa powder, salt and white wheat flour and mix until fully incorporated. With the dough hook attached, add the all purpose flour, 1/2 cup at a time, knead until the dough begins to pull away from the sides of the bowl and isn't sticky. Knead for 5-10 minutes.
Cover with a clean dish towel and let the dough rise for 1 1/2 hours, until doubled in size.
Remove the dough from the bowl and divide into 4 equal portions. Form each portion into a small rectangular loaf and place one on each corner of a greased jelly roll pan. Sprinkle each with 1 Tbsp of old fashioned oats, pressing gently to secure the oats to the bread. Cover and let rise for 45 minutes.
Bake at 350 degrees F for 25 minutes or until the internal temperature is 190 degrees F. Remove from the pan and place on a cooling rack. Cool for 15 minutes then slice and enjoy!
