The amazing thing about bread is how versatile it can be. Different ingredients can be added to change the flavor and the texture. Multigrain bread is a great example of this. Any type of grain or nut can be added to this bread to customize it to the flavor you desire. Unlike store bought bread, you know exactly what ingredients are inside.
If you want the bread to be nutty, add your favorite nuts. If you want it to have more grains, choose your favorites and add them in. You have the ability to create it exactly how you want it! No matter what you add, the end results will be perfect.
This recipe obviously requires grains. Any 5 grain, 7 grain or 10 grain hot cereal will work or you can add your own selection of grains, oatmeal or nuts. The hot cereal mixes are located in the grocery store near the oatmeal or the rice.
If you have a hard time finding the multigrain hot cereal, any mixture of oats will work. This recipe will create a soft and slightly crunchy loaf of bread.
Multigrain Bread Recipe
To create this delicious multigrain bread, start by cooking the grains. Bring 1/2 cup of grains and 1 cup of water to a boil. Once it starts to boil, put a lid on the pan and lower the heat to medium. Cook for 10 minutes. Remove from heat and allow to cool for about 15-20 minutes.
Mix together the yeast and warm water in a stand mixer with the dough hook attached. If you are making dough without a mixer, mix the ingredients in a large bowl. Then, allow the yeast and water to sit, or proof, for about 10 minutes or until the mixture begins to bubble.
Next, add the cooked grains, oil, honey and salt to the yeast mixture and mix. Add the flour, 1/2 cup at a time, until the dough pulls away from the sides of the bowl while kneading and creates a ball. The dough should be slightly sticky.
Knead the dough for 5-8 minutes, until the dough becomes smooth. Cover the dough with a clean dish towel or plastic and allow to rise for 1 hour.
Remove the dough from the bowl onto a clean surface. Form the dough into a rectangle shape the same length of the loaf pan. Place the dough into a greased pan.
Egg Wash
If you want to add oats to the top of the loaf, create an egg wash by mixing together 1 egg and 1 tablespoon of water and brush onto the dough. Sprinkle oats on top of the dough to lightly cover the loaf.
Cover the pan. Let the dough rise for about 45 minutes or until the dough rises above the sides of the pan.
Bake at 350 degrees F for 15 minutes. Place aluminum foil over the pan and bake an additional 15-25 minutes, or until the internal temperature of the bread reaches 180 degrees F.
Remove the pan from the oven and allow to cool for about 5 minutes in the pan. Remove the loaf from the pan and place on a cooling rack. Allow the bread to cool, or just cut right in and enjoy a hot slice of deliciousness. Enjoy!
