If I could live off of any food, aside from bread of course, I would choose Mexican food. I love a good burrito, fajita, quesadilla enchilada or taco. The filling in each of those is delicious, but in my opinion it’s the tortilla that determines how great it is. A soft, warm, fresh tortilla will always improve the meal!
Store bought tortillas are never good enough. They just don’t taste the same as those delicious tortillas fresh off the press at your favorite Mexican restaurant. Did you know that making those delicious, restaurant style tortillas is actually super easy and quick? And so worth it! With Cinco de Mayo coming up next week, now is the perfect time to give them a try and improve any Mexican dish you plan to whip up.
These tortillas are super soft and taste amazing. They also store well and are lard free.
To begin, mix together the flour, baking powder and salt in a large mixing bowl. Add the oil and the hot milk. To heat the milk, cook it in the microwave for 1 1/2 minutes on high heat.
Mix the ingredients together with a wooden spoon until incorporated. Remove from the bowl onto a clean surface and knead for about 2 minutes until the dough is smooth.
Place the dough back in the bowl, cover and let the dough sit for about 30 minutes. The resting time allows for the dough to be rolled out easily and will help keep it’s shape.
After 30 minutes, divide the dough into 8 equal portions. Using a rolling pin, roll into a 7″ round circle (the best you can). If they are not perfectly round it’s okay because they will still taste great. If you want the perfectly round tortillas, then a tortilla press is the way to go (I love mine).
Once the dough is rolled out, cook them on a heated skillet or griddle for about 1-2 minutes per side until golden spots form throughout the tortilla. While heating, stack each cooked tortilla in a clean dish towel and cover to keep them warm.
Fill them with your favorite fixings and enjoy warm!
