My oldest daughter decided a few weeks ago that she wanted to start baking more and to learn new recipes. So, for the last few weeks we have been enjoying all kinds of goodies that she has been whipping up. Her favorite recipe lately has been snickerdoodle cookies. I was pretty excited when she wanted to make them because they are my very favorite cookie. I love all things cinnamon!
So, I had some ripe bananas and I was getting kind of bored of my same banana bread recipe so I decided to mix it up and create a snickerdoodle banana bread. It turned out so delicious that I had to share the recipe with you so you can enjoy it too. It is coated with cinnamon and sugar with a cinnamon-sugar swirl in the middle. One bite of this bread and it will quickly become your go to banana bread recipe!
Start by mashing 3-4 ripe bananas in a large mixing bowl. Add the sugar, butter, and eggs and beat until fully incorporated. Add the baking soda, salt, and cream of tartar. Add the flour 1/2 cup at a time and beat just until incorporated.
Mix together the cinnamon and sugar. Grease a regular size loaf pan and sprinkle 1/4 cup of the mixture into the bottom of the pan. Pour in half the batter mixture and sprinkle 1/4 cup of the cinnamon and sugar mixture on top. Scoop in the rest of the batter and sprinkle the remaining cinnamon and sugar mixture, reserving 1-2 tablespoons.
Bake at 350 degrees F for 45 minutes to 1 hour until a toothpick comes out clean. Sprinkle the remaining cinnamon and sugar mixture on top. Allow the loaf to cool for 5 minutes in the pan. Remove from the pan and place on a cooling rack to cool completely. Slice and enjoy!
Snickerdoodle Banana Bread
Ingredients
- 3-4 ripe bananas
- 1 cup brown sugar
- 1/2 cup butter softened
- 2 eggs
- 1 tsp baking soda
- 1/2 tsp salt
- 1 tsp cream of tartar
- 1 3/4 – 2 cup flour
Cinnamon Sugar Mixture
- 1 1/2 tsp cinnamon
- 3/4 cup sugar
Instructions
- In a large mixing bowl, mash the bananas. Add the brown sugar, butter and eggs and beat until fully incorporated.
- Add the baking soda, salt, and cream of tartar. Add flour, 1/2 cup at a time, just until incorporated.
- In a small mixing bowl stir together the cinnamon and sugar.
- Grease a regular size loaf pan. Sprinkle 1/4 cup of the cinnamon sugar mixture into the bottom of the pan. Pour half the batter into the pan. Sprinkle another 1/4 cup of the cinnamon sugar on top of the batter. Scoop in the remaining batter into the pan and sprinkle the remaining cinnamon sugar mixture on top, reserving 1-2 tablespoons.
- Bake at 350 degrees F for 45 minutes to 1 hour or until a toothpick comes out clean. Sprinkle the remaining cinnamon sugar mixture on top. Allow the loaf to cool for about 5 minutes. Remove onto a cooling rack to cool completely. Slice and enjoy!
