Isn’t life so weird right now? Even after 6 months of enduring this pandemic I still can’t wrap my mind around all the craziness. Some days are easier than others, but it is definitely a unique time. Hopefully you are still hanging in there and things get back to “normal” again soon. Whatever that new normal is. With things ramping back up in the school universe though, I love having some quick and easy meal ideas. Corn tortillas are such a great base for creating a simple and delicious dinner, especially when I don’t have much time to spend in the kitchen.
I didn’t get to bake as much as I wanted this week as my three oldest children started virtual school in full force and my two youngest started destroying my home in full force. I have some pretty active and busy little girls, but these two little boys of mine are nonstop CRAZY. Granted, I think this whole quarantine thing has played a big part in it.
However, this past week alone, while helping my girls with their school work, my two little boys egged my kitchen and laundry room (imagine 36 smashed, raw, runny egg yolks EVERYWHERE; including all over themselves).
Along with egging my home, they dumped an entire container of salt in the bathroom, a bottle of lotion was squirted all over the walls, carpet and bedding in my room, 8,000 tiny perler beads were dumped into the thick carpet in our game room, a ginormous bag of M&M’s was poured and scattered in another room, they pulled out EVERY article of clothing they own and threw it around their room, and then they broke EVERY water globe in my oldest daughter’s collection!
They have had quite a fun week. Haha! I love that they are little buddies though and I am so glad they have each other. I guess I need to just start directing this continuous energy into something a little less destructive; like helping me roll out these corn tortillas.
I’m a huge fan of all things Mexican food. I love my flour tortilla recipe, but when taco Tuesday comes around nothing beats corn tortillas. This recipe is super easy and the tortillas are soft and sturdy. Nothing is more frustrating then having crumbly tortillas that fall apart while eating. You won’t have that problem with these. Plus they taste a billion times better than the ones you buy prepackaged. Also, these are fast and easy to make!
How to Make Corn Tortillas
In a large mixing bowl, mix together the masa harina, salt, oil and 1 cup of water. Add more water, if needed, until the dough forms together without being sticky or crumbly. It should have almost a play-doh feel to it.
Divide the dough into about 15-20 golf size balls. To form the corn tortillas, remove the zipper off of a large Ziploc bag, open the side seams and place each dough ball between the plastic. Press using either a tortilla press or a casserole dish to create a perfect round shell. Be sure to use consistent and even pressure so the same thickness is achieved throughout the tortilla.
Cook the corn tortillas on a griddle set to medium high heat for about 1 minute per side or you can fry them in a fry pan with a little oil. Fast and Easy Corn Tortillas
Ingredients
- 2 cups masa harina
- 1/2 tsp salt
- 2 Tbsp oil
- 1-1 1/4 cup water
Instructions
- In a large mixing bowl, mix together the masa harina, salt, oil and 1 cup water. Once combined, the dough should be a consistency similar to play-doh. It should not be sticky or crumbly.
- If the dough is too crumbly, add 1 Tbsp of water until the the right consistency is formed. If the dough is too sticky do the same with masa harina.
- Divide the dough into about 15-20 golf ball size portions.
- To form the tortillas, use a gallon size Ziploc bag with the zipper removed and the sides cut open (or any thick plastic will work) and place the dough ball in between the plastic. To create the perfect round shell, press the dough balls with either a tortilla press or a casserole dish. Use consistent pressure to create an even thickness, about 2 mm thick.
- Cook the tortillas on a griddle set to medium high heat or fry them in a fry pan with a little oil. Serve right away. Enjoy!
